Pudhina Chutney - version 1

|





Ingredients
Mint/Pudhina Leaves - 1bunch
Coriander leaves - a handful
Curry leaves - a handful
Urad dal - 1tablespoon
Onion - 1
Tomato - 1
Garlic - 2 to 3 pearls
Redchilli - 3 to 4
coconut grated - 2 to 3 tablespoon

To Temper

Oil - 2 teaspoons
Mustard and urad dal - 1teaspoon each


METHOD:
  1. Wash and clean all the leaves thoroughly.
  2. Heat a pan with a teaspoon of oil.Add urad dal and fry till light brown.Add redchilli and garlic.saute well.
  3. To this add onion and fry till onion turns transparant.Next add tomato and salt,fry till tomato gets mushy.
  4. Now add all the leaves and saute well till the leaves are cooked.turn off the heat and allow it to cool.
  5. Grind it along with coconut and temper it with the items given under "To Temper".
  6. Serve with dosa and idli.You can use it as a spread for sandwiches,roll etc

Mint/Pudhina Chutney

Ingredients:

Mint/Pudhina leaves – 2cups
Coriander leaves – 1cup
Curry leaves – 6 or 7 leaves.(optional)
Urad dal – 2 teaspoon.
Onion – 1
Coconut(scrapped) – 1/2 cup
Green Chillies – 3.

Seasoning:

Mustard – 1Teaspoon
Urad dal – 1 teaspoon
Dry Red Chilli – 1.

Method:

1.Dry roast the Urad dal and grind it into powder.

2.Add 1 teaspoon oil in the pan and fry green chillies and add it to the mixer.

3.Now fry onions in 1 teaspoon oil.wen half done add mint,coriander and curry leaves and fry it.Once it is cooked add coconut and fry for 2 mins.

4.switch off the stove and let it cool.

5.Add the mixture to the urad dal and chillies in the mixer and grind it to a chutney consistency.

6.Season it with the ingredients given for seasoning.

7.Serve hot with Dosa,Idli,Chapathi,Rice.
